Silverthorn Greenman Blanc de Blanc

Freshness in 4/4 time — like stepping barefoot into a cold stream. Green Man is Silverthorn’s signature Blanc de Blancs, made from 100% Chardonnay grown in limestone soils in Robertson. It's electric: lime zest, green apple, white flowers, and a touch of shaved fennel. There's a cool tension between brightness and structure — a balancing act between citrus and chalk, energy and finesse.

Food pairing: Perfect with fresh oysters, goat’s cheese crottin, or pea risotto with lemon zest. Anything green, salty, or kissed by spring.
